Introducing PALOMA

At his pan-Latin restaurant in Midtown Manhattan, acclaimed chef PJ Calapa debuts a menu
Inspired by a childhood spent in his grandmother’s kitchen in the Mexican border town of Brownsville, Texas. The new restaurant near Fifth Avenue is an equally loving nod to the cuisines of Central and South America where classics like Fluke Aguachile, Tuna Tostadas, and Peruvian Chicken and Rice prove the Texan has a rare talent for flavorful south-of-the-border cuisine.
